My cacao beans were sourced via Direct Trade from Ingemann Cacao, an organization focused on quality, traceability, and sustainability. They purchase fresh cacao from up to 1,000 small farmers in the region and then expertly ferment and dry it. In the Utrecht Mesjokke chocolate factory, I was then carefully roasted, de-shelled, ground, and tempered — all bean-to-bar.

  • Profile: Dark cocoa, sweet with notes of nuts and cinnamon
